Whew! Halloween weekend left me in its wake. Anybody else feeling a little jet-lagged after a full Saturday of costumes and such?
My menus this week are loosely organized around what's on sale at Giant. Oh, and also me attempting to counterbalance all the sugar that I consumed this weekend.
Monday:
Ginger asparagus and carrot stir-fry, salmon (frozen), brown rice (Success, free after coupon a few weeks ago)
Tuesday:
Quesadillas with salsa, sliced apples, baby carrots
Wednesday:
Baked whole chicken, diced fresh tomatoes with mozzarella, basil, and balsamic vinaigrette
Thursday:
Chicken salad sandwiches, roasted butternut squash
Friday:
Cobb salads: Mixed greens, shredded cheese, canned corn, bacon, etc. (basically whatever's handy)
