I just opened my Wednesday Washington Post and was happy to see 4 Dollar Doubler coupons on the front of this week's Giant ad(7/30-8/5).

As usual, the fine print states:
Redeem 1 or all 4 with just one $15 minimum purchase. $1 manufacturer coupon must accompany each Giant doubler coupon at the time of purchase with your Giant card.

Since these aren't usually found in-store, I may be asking a neighbor or friend for a second set.

Works for Me Wednesday: Freezing Chicken in a Marinade

It's Wednesday, and that means it's time for another "Works for Me Wednesday" tip, as hosted by the blog carnival at We Are THAT Family. See this week's Works for Me Wednesday here.

I(Mel) buy chicken breasts in large quantities when on sale for $1.99/lb. So I have a few meal ideas without having to work, I freeze a few pounds of chicken(.75 to 1 lb. per plastic freezer bag) in my favorite marinades. I'm amazed by how much better the chicken tastes when grilled after being frozen, then thawed in a marinade. The meat is moister and carries more flavor.

Diapers Deal - 50% off on Amazon, Pick Your Brand!

There is a big deal on diapers on Amazon.com! (I originally spotted it yesterday on Money Saving Mom - thanks, Crystal! - but it has spread like wildfire on the blogosphere!) I just did this order last night and got them down to $0.11/ea. (Compared with when I buy them bulk at Sam's Club, when they can run close to $0.30/ea.!) I hope that the deal still stands.

FIRST, get your hands on an August 2010 Parents magazine - if you're a subscriber, great! I am (via a free subscription from RewardsGold), and mine just arrived in the last week. My twist on this deal: I am pretty sure that any generously-sized newsstand at Wal-Mart, the grocery store, etc. would have this magazine, so keep your eyes peeled. (I'm guessing that the magazine can't cost more than about $3, and the coupon inside will save you at least $8, so you're still saving at least $5 additionally even when you hunt down the magazine in stores for the coupon.) There is a coupon right in the middle for 20% off any one unit of diapers at Amazon.com (expires 08/31/2010).

Then:

You will stack the personal one-time-use-only coupon code found on this Parents magazine Amazon coupon with the currently-running deal on the Amazon Diaper page that gives you up to 30% off when you Subscribe and Save. You'll get 50% off - I got a $40 box of 176 size 4 Pampers Baby Dry for a few cents over $20! And delivered straight to my door by Friday, it says. One less thing I have to haul at the store. :)



I'm not sure how much longer Amazon will be running the 30% discount, so jump on this deal today if you need to get yourself some diapers!

Works for Me Wednesday: Go-gurt popsicles!











About a month ago I(Mel) couponed my way to 4 nearly free boxes of Go-gurt. This is not an item I normally buy, but I found a variety that was made with skim milk and had a lower sugar count and went with it. What to do with 4 boxes of Go-gurt?

Frozen popsicles, of course! The Go-gurt website even advertises that if you freeze it, it will thaw by lunch. I like to freeze it so we can eat it as popsicles after pool outings. And by we, I mean that Mama likes it, too! Popsicles for 70 calories can't be beat.

The only hitch is that I really have to help my toddler with it. It takes a few minutes to thaw enough for him to eat it, and he needs help pushing it up. By next summer maybe he'll have that skill mastered!

Salmon @ Giant Cheaper than Previously Thought

So...we are starting to eat a lot more fish and other seafood lately. You could say that I'm making friends with the folks at the seafood counter at my Giant. Being the daughter of Midwesterners, the seafood counter has just always seemed so...well...exotic, if that's believable! But I'm trying to get over the intimidation and have been ordering up lots of fresh and thawed seafood as advertised in the Giant ads, normally the items from the front page. I usually end up on eHow.com, or allrecipes.com, or other sites trying to figure out how to cook them.

With my inlaws stopping by for dinner this past weekend, I ordered up three from a stack of the biggest salmon fillets I've ever seen. No kidding: these suckers were at least as long as my forearm. The guy behind the seafood counter was very nice, mentioning, "...each fillet is a pound or a pound and a half..." I'm guessing he's had his share of people who order up a bunch of seafood only to realize that they've spent way more than they thought.

Well, in my case, I was shocked afterwards to realize that I'd saved way more than I initially thought. While the salmon in the Giant ad is advertised as $9.99/lb. (Save at least $3), the in-store retail price was $19/lb.!! I guess more like Save at least $9/lb.! So the three monster fillets that would have run around $85 actually cost me a bit over $40. I should also note that besides the leftovers I sent home with my mother-in-law, we also had enough salmon to make leftovers meals for my three-year-old daughter, myself, and my husband today, so it's really about what would have generously fed at least 8 adults at just over $5/head - not bad for a normally pricey wild-caught fish. After all, when is the last time you saw a salmon dish plus sides in a restaurant for well under $10? And a few ounces of canned salmon can run $2 or more - compare with 16 oz. of ready-to-cook fresh salmon for $9.99.

My husband grilled them up marinated in a foil packet. Yum.

Menu Plan Monday

I am really excited to try a new eggplant recipe I just received via email from a friend who is also eating to manage insulin. You fry up slices of eggplant French Toast style. Just for fun, I think I'll try some leftover portabello mushrooms this way, too, while I'm at it. Yum!

Monday:
Breakfast - Fried eggs, milk, strawberries (which are $1.66/lb. at Giant this week!)
Lunch - Leftover salmon from Sunday, spinach salad with tahini dressing, fruit salad
Dinner - Crispy Nut and Herb Fried Chicken with avocado, mixed greens salad, blueberries

Tuesday:
Breakfast - Banana custards (made the night before), topped with blueberries and walnuts
Lunch - Eggplant slices and portabello slices French Toast style, strawberries, cheese
Dinner - Scrambled eggs, bacon, baked brussels sprouts

Wednesday:
Breakfast - Whole milk yoghurt, blueberries
Lunch - Curried egg salad in cabbage leaves, peaches
Dinner - Chicken breasts with Korean Short Ribs sauce in the slow cooker, shredded cabbage and carrot salad with sesame tahini vinaigrette, basil, and cilantro

Thursday:
Breakfast - Veggie omelettes, milk
Lunch - Banana almond butter smoothies, sliced peaches
Dinner - "Kitchen Sink" salads - with whatever is around and/or leftover!

Friday:
Breakfast - Cottage cheese, fruit
Lunch - Turkey veggie soup
Dinner - Roasted chickens, salads
