Menu Plan Monday

After lingering suspicions over the last few months that I may be - at least at some level - insulin resistant, I have now been sugar-free and grain-free for over a week. Though I had a couple of tough days of withdrawal initially, by last Sunday 06/20 I woke up "over the hump" and now feel my energy levels higher and much more stabilized. Obviously, this translates to a bit of extra cooking, but I don't really mind, especially now that I have dishwashable cookware at my disposal!

Fortunately for me, there's already a wealth of heavily-cited information, recipes, and community over at Mark's Daily Apple* (among other long-followed blogs like Simply Sugar and Gluten Free) as I kick off the new way of eating with me (not my appetite) in the driver's seat.

I feel blessed that my husband and oldest daughter are happily along for the ride, so long as it tastes good! (And they will still dine on breakfast cereal, and the odd frozen lasagna or pizza, for sure.) Of course, because I'm nursing, and because my girls are still growing, we have a few carbier veggies and fruits - pineapple, papaya, sweet potatoes, plantains, bananas, mangos (but no corn or regular white potatoes) - thrown in.

I'm loving the sugar-free fruit-based custards as a way to get in a good balance of natural carbs, protein, and fat for a satiating, ready-to-eat-straight-from-the-fridge breakfast. They're kind of like natural Whips!, for those who have had the Yoplait treat, and take me less than 10 minutes to throw in the oven the night before.

Monday:
Breakfast: Chocolate raspberry custard, eggs, milk
Lunch: Salads topped with seasoned ground turkey (yes, still a lot of this to use up!), tomatoes, balsamic vinegar, etc.
Dinner: Baked chicken, garlic-ginger green beans, sweet potatoes
*Making a big fruit salad this night to propel us through the week!

Tuesday:
Breakfast: Rhubarb-cherry custard, eggs, milk (the rhubarb was free from my sister-in-law, and the cherries are super-cheap at Giant this week)
Lunch: Broiled fish, fruit salad, spinach salad with toasted pecans
Dinner: Stir-fry beef and brocolli, fruit salad

Wednesday:
Breakfast: Fruit salad, almonds, milk
Lunch: Roasted eggplant, summer squash, tomatoes, and scallops with a creamy tomato sauce
Dinner: Crockpot London broil, salads topped with veggies

Thursday:
Breakfast: Fruit smoothies made with leftover fruit salad and coconut milk
Lunch: Cabbage-and-kale salad with sesame vinaigrette and shredded leftover London broil
Dinner: Grilled skewered chicken breast (my daughter calls them "chicken wands"), grilled pineapple, salads

Friday:
Breakfast: Chocolate-banana custard topped with (unsweetened) coconut and toasted walnuts, milk
Lunch: Curried egg salad, served in cabbage leaves
Dinner: BLT salads, plantain fries

*Note that my own belief is that - however we as humans came about - God created everything and everyone, but likely did not create humans to subsist on a diet centering around - as mine did for a while - white pasta, white flour, white rice, sugar, candy, heavily processed foods, etc. - all of which Adam and Eve managed without ;-p

Regal Free Family Film Festival Starts June 29!


MARK THE CALENDAR!

I know I'm not the only mom excited about Regal's Free Family Film Festival. In Northern Virginia, it starts next week (June 29) and runs every Tuesday & Wednesday at 10 am through
August 25. Woot!

Two summers ago my toddler couldn't sit through a whole kids' movie without walking around, but this summer I think he'll do well. If you haven't tried Regal's free movies out, I(Mel) highly recommend it. There are quite a few participating theaters in Northern Virginia. Movies start at 10 am, and movie snacks are discounted. I've seen moms with sleeping or nursing babies, and the movies can be a bit loud with all the kids. But it's a great way to get out on hot days, and we've enjoyed meeting friends at movies so share the fun. Can you beat free, air conditioned entertainment during the summer?!
I've marked my calendar for the movies we can attend all summer and look forward to taking my toddler to the Veggie Tales movie, "Pirates Who Don't Do Anything" in 2 weeks. Let us know if you go!

Works for Me Wednesday: Ice Cream Scooping My Watermelons!

It's Wednesday, and that means it's time for another "Works for Me Wednesday" tip, as hosted by the blog carnival at We Are THAT Family. See this week's Works for Me Wednesday here.

Now that watermelon season is here, my family can easily plow through one or two melons each week without even trying. Loss leader price on full sized melon in our region is around $3.50-$4, whereas retail is around $7, so if you're in the mood for a melon, you might want to check the ads for the stores closest to you; one of them is bound to have watermelon on sale any given week throughout the summer. As a matter of fact, watermelons are going for $3.99 at Giant this week!

The only thing I really used to dislike about watermelon was how space/time intensive and messy the whole operation seemed when cutting slices - and once cut, the slices took up a couple of shelves in our fridge. But I figured out a shortcut that works for us:

I use our ice cream scoop to scoop large bites of watermelon out of the melon halves into a big bowl!

Definitely not quite as dainty as a tiny-sized melon-baller, but it gets the job done. Reasons why I love doing it this way:
  • Less juice everywhere! With the bowl right next to the halfed section of melon, the scooped bites barely have a chance to drip anywhere. (Compare this with slicing into wedges, which pretty much invites juice to drip all over my cutting board and the countertop.)

  • Faster! I can scoop out both halves of a watermelon in less than five minutes - definitely less time than it takes me to figure out the visual math of dividing it into reasonable slices.

  • Less energy-intensive. I ask you, what takes more effort: using your most mammoth kitchen knife to slice through watermelon rind again, and again, or scooping lush, soft bites of watermelon?

  • It takes less fridge space! Once I have a big bowl full of bites of watermelon, I can either clear one part of a shelf, or spoon the watermelon scoops into smaller work-lunch-friendly Rubbermaid containers. Definitely less fridge space taken than when I have the slices stacked in bowls and trays.

  • It makes for a great snack without all the mental effort/prep. Once I've scooped a watermelon, we have ready-to-eat watermelon on hand for 2-3 days - a favorite, healthy snack for all of us, cold from the fridge.

    delicious - the best blueberries I've had in ages. This could be considered a freezable price at $1.25/pint, as I can't remember them getting much cheaper than this.

Menu Plan Monday

Whew! What a weekend. We got to spend a lot of time with family, and squeeze in some good surf'n'turf eats. Basically, ever since my sister-in-law showed us at the beginning of June how to butterfly and grill fresh shrimp with a light honey butter glaze, we have been hooked, as it were. I could pretty much eat those shrimp every single night, as a matter of fact. But for now, I'll hold us off to two nights this week, since fresh shrimp is on sale at Giant.

I am admittedly running out of steam in some ways on the eat-from-the-pantry thing from this month, due in part to the fact that while my pantry is full of carby staples, I did not plan or have enough protein frozen/stocked up to pull us through the end of the month. But on the up side, I am still doing well not buying pantry items like cereal, baking items, etc. that would otherwise be tempting with deals going around, nor am I shopping for food for our family on Amazon this month, so there are still significant savings at play for our family's budget.

Finally: My inlaws surprised my husband and I with an awesome joint birthday gift: New nonstick pots and pants that are dishwasher safe!!!! (Thank you!) I did not even know that dishwasher-safe nonstick pans existed, but now that we're the proud owners, I cannot wait to try these puppies out this week. (*Does happy dance.*)

I've continued to bold items that feature heavy pantry usage.

Monday:
Breakfast: Sliced peaches, watermelon ($3.88/ea. at Giant!), microwave-fried eggs, milk
Lunch: Sister Slaw, with kale and red cabbage, and chunks of leftover chicken throughout (this recipe uses a lot of condiments I need to use up!), and leftover garlic cauliflower from this weekend
Dinner: Stir-fry: broccolini, carrots, leeks, thinly-sliced steak

Tuesday:
Breakfast: Yoghurt and honey, oatmeal, milk
Lunch: Herb-roasted eggplant, berries, apples
Dinner: Chicken breasts baked in coconut milk and garlic, salad

Wednesday:
Breakfast: Pumpkin custard (no white sugar added, baked the night before, uses coconut milk and canned pumpkin), milk
Lunch: Carmellized onion chicken soup
Dinner: Grilled shrimp ($5.99/lb. @ Giant) and asparagus, grilled pineapple slices (pineapples $2/ea. at Giant!), brown rice

Thursday:
Breakfast: Omelettes with the new omelette pan (horray!)
Lunch: Leftovers
Dinner: Tilapia, stir-fry squash and carrots, pasta

Friday:
Breakfast: Cubed fruit, yoghurt, milk
Lunch: Quiche
Dinner: Grilling out again, maybe shrimp, or whatever's on sale for the following week at Giant

Menu Plan Monday - Anybody Out There With Indian Cooking Tips?

I tend to keep a large stash of Trader Joe's Jaipur Vegetables in my pantry to indulge my cravings for:

a) a quick veggie-based lunch that both my three-year-old and I will eat (we split a $2.20 package between the two of us, usually), and
b) Indian spices (my husband and my entire extended family are decidedly not fans of Indian food, so making large dishes with Indian spices has the potential to be wasteful in our household)

I've also seen packet versions of Jaipur veggies on Amazon, but I am lately pondering if there might be a crockpot type version of Jaipur vegetables out there so that I might try making it from scratch. I figured that if I could nail it and maybe freeze servings, the seasonings, potatoes, carrots, beans, etc. might enable me to enjoy the dish for cheaper than $2.20/lunch. It would be a great "freezer day" project for me as I could add chopped veggies to the crock pot to simmer whenever - ideal with a nursing baby around.

Do we have any readers out there with talents in the Indian culinary arts that might be able to point me in the right direction or offer tips?

Trip to WalMart


Did a trip to Wally World today. Here are some clearance finds (some I bought; others I spotted):

Girls'/Baby girls' shoes: lilac flat, red satin w/ruffle flats (think Christmas!), Garanimals Velcro sneakers, glittery Mary Jane's, all clearanced to $3/pair
Hint: With babies and toddlers, it has usually worked for me to think ahead around one shoe size up every 3-4 months. When in doubt, I buy a size up, knowing eventually they'll grow into it!

(I also saw women's flats marked down to $1-$5!)

Garanimals separates (girls' and boys'), marked down to $1/each. I got my youngest some black yoga style pants at this price!

Girls' polo shirts, organic cotton, orig. $5, now $3. (The one above features tiny light blue hearts on a navy background with large buttons on the placket.)

Giant Triplers?

I saw a Giant ad with triplers today, but it was on the same page as some specials for one particular Giant location. Can any readers/bloggers reading clue me in with a comment as to whether your Giant ad also featured tripler coupons? (Some get the Giant ad in the Washington Post as early as today.)

If there are indeed triplers in the circulars for more than a couple of stores, I'll try to take the time to also include tripler highlights in the Giant matchups for this week.

Shopper's Coupon Booklet Spotted in Local Paper - Includes Freebies and Cheapies This Week!

I'm not sure if this also appeared in the Washington Post (as I only have our local paper here for reference), but Shopper's Food Warehouse issued a coupon booklet with store coupons resulting in some pretty sweet savings. Judging by the wording (Limit one (1) coupon per household), I'm fairly sure that you cannot combine these coupons with manufacturer coupons, but there are still some good deals, including a freebie!

Here are some of the best coupons that I saw in the booklet, good 06/09/10-06/16/10:
  • Coca-Cola 20-packs, $3.99 (Equivalent 12-pack price would be $2.39, or $0.19/can - not too shabby)
    Limit One 20-pack

  • Post Cereals, 11-20 oz. box, selected varieties, $0.99
    Limit 2 boxes per coupon

  • FREE Betty Crocker Frosting with coupon
    Limit one package per coupon when you buy a Betty Crocker Cake Mix (thanks, Amy!!!)
    Note:
    You could use a Betty Crocker Cake Mix coupon, probably, if you have one.
    The 05/02 SmartSource has a coupon for $0.75 off a cake mix and frosting both, which would double to $1.50 off, but my instincts say that this may not play with the Shopper's coupon because it says one coupon per household.

Menu Plan Monday: Eat from the Pantry June 2010, Part One

Let the official June eating from the pantry menu plans commence. I'll bold everything involving a nonperishable pantry staple for reference.

Monday:
Breakfast - Yoghurt, sliced fruit, milk
Lunch - Pumpkin soup (leftover from a batch that I made on Saturday, loosely based on this recipe), shredded cabbage salad
Dinner - Sausage quiche with this highly-rated flaky crust, since my mother-in-law spontaneously gave us some Jimmy Dean pork sausage, and I have a whole lot of veggie shortening to use

Tuesday:
Breakfast - Peanut butter baked oatmeal (thanks, Sharon!), milk
Lunch - Leftover sausage quiche (with a from-the-pantry crust)
Dinner - Stir-fry chicken, asparagus, coconut rice (thanks, C Shipe!)

Wednesday:
Breakfast - California cherries @ $2.22/lb. from Giant, bananas, milk
Lunch - Trader Joe's Jaipur veggies, leftover coconut rice
Dinner - Baked tilapia, brown rice, salad

Thursday:
Breakfast - Brown rice breakfast porridge, milk
Lunch - Sliced apples with peanut butter, iceberg lettuce with bacon-avocado ranch dressing (based loosely on this) - Avocados are $1/ea., and iceberg lettuce is $0.88/head at Giant this week!
Dinner - Annie's Mac'n'Cheese
*Will make/bake and freeze some whole wheat pumpkin chocolate chip muffins Thursday night, and save a few for Friday morning and my husband's Friday lunch

Friday:
Breakfast - Whole wheat pumpkin chocolate chip muffins, courtesy of Unfinished Mom (Thanks, Sharon, for the suggestion!), milk
Lunch - Miso soup with tofu and brown rice
Dinner - Frozen lasagna, salad
