Whew! What a weekend. We got to spend a lot of time with family, and squeeze in some good surf'n'turf eats. Basically, ever since my sister-in-law showed us at the beginning of June how to butterfly and grill fresh shrimp with a light honey butter glaze, we have been hooked, as it were. I could pretty much eat those shrimp every single night, as a matter of fact. But for now, I'll hold us off to two nights this week, since fresh shrimp is on sale at Giant.
I am admittedly running out of steam in some ways on the eat-from-the-pantry thing from this month, due in part to the fact that while my pantry is full of carby staples, I did not plan or have enough protein frozen/stocked up to pull us through the end of the month. But on the up side, I am still doing well not buying pantry items like cereal, baking items, etc. that would otherwise be tempting with deals going around, nor am I shopping for food for our family on Amazon this month, so there are still significant savings at play for our family's budget.
Finally: My inlaws surprised my husband and I with an awesome joint birthday gift: New nonstick pots and pants that are dishwasher safe!!!! (Thank you!) I did not even know that dishwasher-safe nonstick pans existed, but now that we're the proud owners, I cannot wait to try these puppies out this week. (*Does happy dance.*)
I've continued to bold items that feature heavy pantry usage.
Monday:
Breakfast: Sliced peaches, watermelon ($3.88/ea. at Giant!), microwave-fried eggs, milk
Lunch: Sister Slaw, with kale and red cabbage, and chunks of leftover chicken throughout (this recipe uses a lot of condiments I need to use up!), and leftover garlic cauliflower from this weekend
Dinner: Stir-fry: broccolini, carrots, leeks, thinly-sliced steak
Tuesday:
Breakfast: Yoghurt and honey, oatmeal, milk
Lunch: Herb-roasted eggplant, berries, apples
Dinner: Chicken breasts baked in coconut milk and garlic, salad
Wednesday:
Breakfast: Pumpkin custard (no white sugar added, baked the night before, uses coconut milk and canned pumpkin), milk
Lunch: Carmellized onion chicken soup
Dinner: Grilled shrimp ($5.99/lb. @ Giant) and asparagus, grilled pineapple slices (pineapples $2/ea. at Giant!), brown rice
Thursday:
Breakfast: Omelettes with the new omelette pan (horray!)
Lunch: Leftovers
Dinner: Tilapia, stir-fry squash and carrots, pasta
Friday:
Breakfast: Cubed fruit, yoghurt, milk
Lunch: Quiche
Dinner: Grilling out again, maybe shrimp, or whatever's on sale for the following week at Giant

Your menu sounds great! good luck with finishing eating from the pantry. I need to do that also!
